You only download by hand once. When a newer version is out the app offers it, downloads it in the background while you keep serving customers, and checks the file before installing anything.
Which phones
Anything on Android 5.1 or newer, including the cheap handsets already on most counters. A camera helps for scanning barcodes and pairing a booth, but you can type both by hand.
